Common Questions.
Do you dry-age beef?
No. We hang beef 7–10 days before cutting - that's proper handling, not dry-aging. No surcharge, no upsell. If you want a longer hang or a specific age, ask about it at drop-off.
Is ground beef extra?
No. Ground beef processing is included in the cut & wrap price. Same goes for ground pork.
Do you make sausage or brats from beef?
Not traditional pork-blend sausage. But you can add specialty beef items - wieners, snack sticks, summer sausage, or ring bologna. Those are made in 15 lb batches for a flat fee each.
Do I need an appointment to drop off?
Yes for domestic livestock - book 4–6 weeks out. During deer season, walk-ins are welcome but a call ahead speeds things up. Bear must be scheduled.
How long does processing take?
Standard turnaround is 10–14 days for beef (after the 7–10 day hang), 7–10 days for pork, 5–7 days for venison, and 7–10 days for bear. We'll call you when it's ready.
Can I bring my own recipes for sausage or brats?
Absolutely. Bring the recipe and any specialty ingredients. We're happy to work from your specs.
What do I need to bring for wild game?
The animal, your registration/tag, and a cooler with ice for the drive home if needed. We'll provide cutting sheets on-site.
Paper wrap or vacuum sealed - which should I pick?
Vacuum sealed lasts longer in the freezer and protects better against freezer burn - worth the $0.20/lb difference for most customers. Paper wrap is the traditional choice and freezer-friendly for shorter storage (6–8 months).
