Our Story

I Didn't Start Prime Cuts to
Sell Meat.

I didn't start Prime Cuts Meat Market because I simply wanted to sell meat. I started it because I saw something missing.

Most people walk into a grocery store, grab a package of meat, and really have no idea where it came from. They don't know the farm. They don't know how the animal was raised. They don't know how long that meat has traveled, who processed it, or what happened between the farm and their family's dinner table.

We've gotten to a point where we've become disconnected from our food.

I wanted to change that.

I wanted to build a place where people could buy meat and actually know the story behind it. A place where you could know the farmers, know how the animals were raised, know where your meat was processed, and feel confident about what you're putting on the table for your family.

That's what Prime Cuts Meat Market is becoming.

It started with quality.
It became about trust.

Quality has always mattered to me. I want the steak you put on the grill to be something you're excited about. I want the bacon at breakfast, the burgers on a Saturday night, and the roast you make for your family to taste like something you can't just grab anywhere.

But as I've built this business, I've realized that quality goes much deeper than how something tastes.

"I don't want someone buying beef from us because our label looks good. I want them buying from us because they know us."

I want customers to be able to trace their food back to its source - to see the farm it came from, learn how the animal was raised, and understand the process that brought that meat to their table.

That's why I'm willing to do things the harder way. Tracking animals individually, working directly with farms, improving what we're feeding, processing locally, and creating real traceability isn't necessarily the easiest or cheapest way to sell meat.

But I'm not trying to build the easiest meat company. I'm trying to build one of the most trusted.

We're building something
for real families.

Another thing I've learned is that buying meat shouldn't mean filling a freezer with things your family doesn't actually eat.

Every family is different. Some families go through hamburger like crazy. Some want steaks. Some eat a lot of chicken. Some love pork chops and bacon. And some people simply don't have room for half a beef sitting in their freezer.

That's a big reason I've become so passionate about our Build Your Own Boxes and monthly meat options. I want people to get what their family will actually use.

Less waste. More variety. Better meat. And the convenience of having it available when they need it.

Instead of asking families to completely change the way they eat to buy local meat, I want to make local, high-quality meat fit into the way their family already lives.

Supporting the people
behind the food.

Prime Cuts isn't just about the customer, either. It's about the farmers.

There are great farmers throughout Wisconsin who care about their animals and take pride in what they produce. I want Prime Cuts to help connect those farmers directly with families who appreciate what they're doing.

The bigger this becomes, the more opportunities we can create for local farms. That's important to me. Because when someone spends their money with Prime Cuts, I want that money doing more than purchasing a package of meat.

I want it supporting farmers, families, jobs, and communities right here at home.

I'm not interested in building something that grows fast and disappears just as fast. I want to earn this.

My vision is for Prime Cuts to become a meat source families can rely on year after year - a company where when you see the Prime Cuts name, you don't have to wonder whether you're getting something good.

You already know. You know where it came from. You know who's standing behind it. And you know we didn't take shortcuts to get it there.

Someday, I want to take what we're building here in Wisconsin and make that connection possible for far more families - while still keeping the local farms, personal relationships, traceability, and trust that made it special in the first place.

"No matter how big Prime Cuts becomes, I never want us to become another faceless meat company. I want people to know us. I want them to know our farmers. And I want them to know their food."
What we won't compromise on

Four things that
won't change.

Everything else can grow. These stay the same.

01

Know the Farm

If we haven't stood on the land, we don't sell the meat. Every farm is visited, verified, and known by name.

02

Trace Every Animal

Animals tracked individually. Farms named. Processing dated. If you want to know where your dinner came from, you can.

03

Meat You'll Actually Eat

Build Your Own Boxes let your family get what you'll actually use. Less waste. More variety. Better meat.

04

Support Local Farms

The bigger Prime Cuts gets, the more we can pay Wisconsin farmers fairly for the way they raise their animals.

05

Do It the Harder Way

Individual tracking, direct farm relationships, local processing - none of it is the easiest way. That's the point.

06

Never Be Faceless

You should know who's behind your food. Answer the phone. Stand behind the meat. Show up to work.

That's why I started Prime Cuts

Real meat.
Real farms.
Real people.

From our farms, through our hands, to your family's table.
