Pasture-raised heritage pork from a family operation running four classic breeds - Berkshire, Duroc, Hampshire, and Chester White - with Hereford hogs rounding out the herd. The mix means real depth of flavor and the kind of marbling you can only get from animals raised outdoors, on their own time.
